Amrican Chopsuey...

 Introduction: American Chopsuey is fried noodles cooked with Chinese sauce. Excellent menu for dinner.




Ingredients:


  • Noodles Fried
  • Oil 2tbs
  • Green chillies 2
  • Garlic Cloves 7-8
  • Ginger Chopped 1 Inch
  • Onion cut in cubes 1big
  • Carrot cut into cubes 1/2 carrot
  • Capsicum Cut into cubes 1 medium
  • French Beans chopped 5-6
  • Spring Onion chopped
  •  Soy Sauce as per you taste
  • Cornflour diluted in water 3tbs
  • Vinegar or lemon 2tbs
  • Vegetable stock or water
  • Sugar 1tbs
  • Salt as per your taste
  • Black pepper 1/2 tbs
Method

  • Frying Noodles
  1. Boil the water in a wok 
  2. Add any noodles in it add salt cook till noodles are cooked it will not take more time. (You can use Maggie noodles also )
  3. Once the noodles get soft take it out and drain all the water.
  4. Take oil in a wok and put some noodles in oil and deep fry it.
  5. Take out on absorbent paper.
  • Garvy
  1. Take oil in a pan
  2. Add garic and green chilli fry till garlic turns golden brown
  3. Add Ginger 
  4. Add all veggies stir fast just for a minute or two
  5. Add soy sauce and water
  6. Give it a boil
  7. Then add diluted cornflour. This will give right consistency to the sauce. It should not be thick or too watery.
  8. Lastly add sugar to cut the sourness of soy sauce, salt as per your taste, lemon and black pepper
  9. And your gravy is ready
Serving suggestions: You can mix noodles and gravy together in a wok or you can have it just as it is shown in pic.

Chinese Fried Rice...


Introduction: This dish doesn't need any introduction. Everyone's favorite Chinese Fried Rice.





Ingredients:
 
  • Long grain Basmati rice cooked
  • Oil 4tbs
  • Carrot chopped half
  • Capsicum chopped 1 small
  • Onions chopped 1 big
  • Tomato chopped 1 big
  • Spring onion chopped 1 bunch 
  • Green Chilli chopped 2
  • Garlic Cloves chopped 8-9
  • Soy Sauce 2tbs
  • Vinegar or Lemon Juice 2tbs
  • Black pepper 1/2tbs
  •  Salt to taste

Method

  1.  Take oil in a wok
  2. When oil is hot add chopped green chillies and
  3. Chopped Garlic fry till it changes its color to golden brown
  4. Add all the veggies stir it for few 2minutes (do not cook the veggies they should remain crispy)
  5. Now add Soy Sauce Mix everthing
  6. Add rice, lemon, black pepper and salt.
  7. Stir and your fried rice is ready to be served.
Serving suggestions: I love  having fried rice with Manchurian gravy.

Thai Red Curry...

Introduction: Thai curries are vegetables or meat cooked with spices and coconut milk. Their are four types of Thai curry's Red, Yellow, Green and Masaman curry.



Ingredients:
 
  • Oil 2tbs
  • Dry Chilli 2
  • Galangal (as per your taste)
  • Garlic Cloves 5
  • Shallots 2
  • Lemon Grass two sticks
  • Coriander Seeds 2tbs
  • Cumin 1tbs
  • Black Pepper 1/4  tbs
  • Soy Sauce 1tbs
  • Lemon zest 1/2 tbs (optional)
  • Coconut Milk 1/2 cup
  • Some veggies chopped
  • Basil leaves 4-5
  • Salt as per taste

Method

  • Grind all the ingredients and make a paste
  • Dry Chilli 2
  • Galangal (as per your taste)
  • Garlic Cloves 5
  • Shallots 2
  • Lemon Grass two sticks
  • Coriander Seeds 2tbs
  • Cumin Powder 1tbs
  • Black Pepper 1/4  tbs
  • Soy Sauce 1tbs
  • Lemon Zest 1/2 tbs (optional)
  • Coconut Milk 2 tbs
  1. Take oil in a pan
  2. add shallots fry till it changes color
  3. add red curry paste
  4. add coconut milk
  5. add vegetable stock or water give it a boil
  6. add vegetables (carrot, capsicum, potato, mushroom, baby-corn, beans)
  7. add salt and simmer it for 10 mins
  8. add basil leaves.
  9. Thai curry is ready to serve. 
Serving suggestions: Taste best with steam rice.

Note: You can make the red curry paste and store it in a fridge.

Spring Onion curry

Introduction: Curries are vegetables cooked in spices to get nice aroma and taste. They can be served with rice or roti. 




 Ingredients:
 
  • Spring onion 4 bunches
  • Oil 2tbs
  • Mustard seeds 1tbs
  • Onion chopped 1big
  • Chilli's Chopped 2
  • Ginger-Garlic Paste 1 tbs
  • Red chilli powder 1tbs
  • Turmeric 1/2 tbs
  • Garam Masala 1tbs
  • (If you want you can add cumin and coriander power)

Method

  1. Take two tbs of oil in a nonstick pan
  2. Add muster seeds to the oil. let the seeds splutter
  3. green chillies
  4. Ginger-Garlic Paste fry till nice aroma of garlic comes
  5. Add onions fry till it changes color 
  6. Add all the above spices 
  7. add some water after two minutes
  8. add chopped spring onions
  9. Mix all and your spring onion curry is ready.
Serving suggestion: You can have it with rice or roti taste best when its hot and if it is left over you can have it like sandwich with all your veggies or just the curry with bread.
